Fruits and Corn Salad with Mint Dressing ( Summer Salad Recipe)

 

 

Everyone wants to enjoy the taste of chilled recipes in summer season… and Salads are the best option. Fruit and Corn salad is quick and easy no cook meal idea will have you and your family fed in no time without ever having to turn on that gas or oven. Nothing compliments the heat like a cold summer salad. I used summer special juicy fruits and corn in this salad and for seasoning I used mint flavored chutney with honey and salt.

This salad is rich in vitamins, iron and folic acids. This colorful salad is good meal for kids in summer season with a combination of fruits and vegetables. Even you can replace the fruits as per your kids’ choice and taste.

What we need to make fruit and corn salad:

1 Cup Watermelon, Cubes

1 Cup Pineapple, Cubes

1 Cup English Cucumber, Cubes

1 Cup Sweet Corn Kernels, Boiled

1/2 Cup Lettuce, Roughly Chopped

2 Tbsps. Mint and Coriander Leaves

2 Tbsps. Dried Cranberries

2 Tbsps. Almonds, Roasted and Chopped

 

For Mint Dressing

Salt to Taste

2 Tbsps. Mint Chutney

1 Tbsp. Honey

 

How to make fruit and corn salad:

Combine mint chutney, salt and honey in small bowl and mix well. Combine all the ingredients in a deep bowl and add mint dressing over it and toss well. Serve chilled.

Ingredients

  • 1 Cup Pineapple, Diced
  • 1 Cup Watermelon, Diced
  • 1 Cup English Cucumber, Diced
  • 1 Cup Sweet Corn Kernels
  • 1/2 Cup Lettuce, Torn
  • 2 Tbsps. Coriander Leaves, Chopped
  • 2 Tbsps. Cranberries, Dried
  • 2 Tbsps. Almonds, Roasted

For Mint Dressing

  • 2 Tbsps. Mint Chutney
  • Salt to taste
  • Lemon Juice
  • 1 Tbsps. Honey

Instructions

  1. Combine mint chutney, salt and honey in small bowl and mix well. 

  2. Combine all the ingredients in a deep bowl and add mint dressing over it and toss well. Serve chilled.
