Khichdi Na Muthia (Gujarati Recipe)

Muthia is an Indian food which is derived from the way it is made, from the gripping action of the hand. It is just like sausage but it is a vegan dish. It is made up of chickpea flour, methi, salt, turmeric powder, chili powder and oil. You can keep this snack for few days as snack. You can use fried or steamed technique to cook this dish. For more variation, you can add other leaf vegetables such as spinach, amaranth, lauki, bitter gourd, carrot or cabbage. It can be served as snack with pudina chutney or onion chutney.

Khichdi na Muthia is a staple dish of Gujrat cuisine which cooked in each and every Guajarati family. This time I shared steamed muthia recipe which made from leftover khichdi. I used simple khichdi recipe which made from rice and green lentils with little salt and turmeric powder. Khichdi Na Muthia is a simple and steamed snack which made by mashed khichdi, besan, lauki and spices.

Ingredients for Khichdi Na Muthias:

2 Cups Leftover Khichdi

1 Cup Bottle Gourd (Lauki), Grated

1/2 Cup Gram Flour (Besan)

1 Tsp. Ginger, Grated

1 Tsp. Green Chilies, Chopped

2 Tbsps. Coriander Leaves, Chopped

2 Tbsps. Oil

1 Tsp. Mustard Seeds

1/2 Tsp. Cumin seeds

Few Curry Leaves

1 Tsp. Sesame Seeds

1/2 Tsp. Turmeric Powder

1 Tsp. Red Chili Powder

Salt to taste

 

How to Make Khichdi Na Muthia Recipe:

Combine khichdi, gram flour, green chilies, ginger, lauki, salt, turmeric powder, red chili powder, coriander leaves and oil. Mix well till to firm dough. Grease your hands with oil, divide the mixture into 20 equal portions and roll into oval shape. Place the pieces into steamer plate and steam it on medium heat for 15-20 minutes. Transfer the steamed muthia pieces onto a separate plate. Heat the oil in tempering pan. Add mustard seeds and cumin seeds. When they start splutter, add curry leaves and sesame seeds. Add steamed muthias and toss them in tempering for few minutes. Transfer onto a serving platter. Serve khichdi na Muthia with chutney and tea or coffee as evening snack.
