Varki Ka Paratha | Layered Indian Paratha Recipe

Varkey or Varki Paratha is very unique paratha in texture and taste both. Varki paratha is served as breakfast meal or in lunch dinner menu with dal or paneer dish. Varki Paratha is a flaky layered paratha which tastes so crispy and flaky because of rice flour and ghee. You can call varki paratha or warqi paratha which is quite popular in Ooty.

To make varki paratha you have to combine plain and wheat flour together to knead soft dough and grease with rice ghee mixture to get separate layers. Cook the each paratha on tawa till to golden.

 

 

Ingredients

1 Cup Whole Wheat Flour

1 Cup Plain Flour/ Maida

4 Tbsps. Rice Flour

4 Tbsp. Desi Ghee

1/4 Cup Milk

Salt to Taste

Ghee for Cooking

How to Make Paratha:

Combine rice flour and ghee in a bowl and make a smooth paste and keep aside. Combine plain flour, wheat flour, milk, salt and enough water to make a soft dough. Divide the dough into equal 6-8 Portions and roll each portion into a thin roti. Place one roti and spread rice mixture evenly. Place another roti on the top of first one, repeat the same process till to all rotis have been placed. Roll it tightly from one end to another end like roll. Cut the roll into equal 5-6 portions. Roll it again into paratha form using rolling pin. Heat the tawa and cook the paratha till to golden and crisp from both sides using ghee. Do same process with remaining balls. Serve hot parathas.

  3. A nice flaky paratha Preeti..I too was going to make it but decided against it as hubby and I had enough of ghee or oil rich flatbreads. Will make it for breakfast one day as hubby loves them.
