Rava Onion Uttapam | Instant Rava Uttapam Recipe

Rava Uttapam is one of mine favorite breakfast
recipe. Whenever I feel hungry, I made this instant rava uttapam with some
veggies or onions. For instant version, you have to just combine curd and rava together
with salt and eno to prepare crisp and small uttapam within 5 minutes. You have
to prepare the consistency of batter just like idli batter. I added small
quantity of carrot also just for giving nice and colourful texture, it’s
completely optional.

South Indian Cuisine
1/2 Cup Rava/ Semolina
1/2 Cup Yogurt
Salt to taste
1/2 Tsp. Eno (Fruit Salt)
2 Green Chilies, finely chopped
2 Medium Onions, finely chopped
2 Tbsp. Carrot, finely chopped (optional)
Butter for shallow fry

Peel and finely chop the onions and carrots. Combine
rava, yogurt, green chili and salt together in large bowl. Add eno at the time
of making uttapam.

Pour the 1 ladle full of batter in hot
greased non-stick pan.

Sprinkle the chopped onion and carrot on the
top of batter.

Drizzle the butter and cook on medium flame.
Flip the uttapam and cook again for 2 minutes
until to both sides get golden brown and crisp.
Serve hot onion uttapam with coconut chuntey.

Lemon Rice| Andhra Cuisine

Lemon Rice is a very common recipe in Andhra
Pradesh, Karnataka, Tamilnadu made with lemon flavored and vibrant yellow color.
It’s known as pulihora also, puli means sour taste and pulihora is also referred
to as sour rice. This tangy rice is perfect meal for lunch time or tiffin meal.
In this recipe you have to prepare tempering in sesame oil and then toss with
cooked rice and lemon juice. You can serve this tangy flavor lemon rice with

2 Cup Cooked Rice
3 Tbsp. Peanuts, roasted
2 Green Chilies, finely chopped
2 Tbsp. Oil
3 Tbsp. Lemon Juice
Salt to Taste
1/2 Tsp. Turmeric Powder
1 Tsp. Mustard Seeds
1 Tsp. Urad Dal
1 Tbsp. Chana Dal
Pinch of Asafoetida
8-10 Curry Leaves
2-3 Whole Dry Red Chili, de-seed
Heat the oil in a deep vessel. When oil is
hot enough, add tempering ingredients.
When mustard seed starts sizzle, add chopped
green chilies and roasted peanuts and stir for two minutes.
Add turmeric powder and cooked rice and mix
well.  Turn off the heat.
Combine the lemon juice with salt and mix in
cooked rice. Serve this lemon rice with fresh curd.
Notes: Adjust the lemon juice according to
tastebuds, if you like more tangy flavor.

Bread Idli – Instant Snack

Bread idli is an easy and tempting snack
which you can prepare with in few minutes with few ingredients, which are
easily available in our kitchen. In this recipe, you have to prepare three
steps and then assemble them in one platter. First one is aloo tikki or potato
cakes, you can add some seasonal veggies also. Second, is bread slices and last one is tempered curd. If you try this recipe, please

8 Bread Slices
For Potato
3 Large Potatoes, Boiled and mashed
Green Chilies, Chopped
Salt to Taste
Red Chili Powder to Taste
Oil for greasing
For Curd
1 Cup Yogurt
Few Curry Leaves
1 Tsp. Mustard Seeds
Salt to taste
Red Chili Paste to taste
1 Tbsp. Oil

Prepare firm dough using mashed potatoes,
green chili, spices and cook from both sides on hot griddle. Keep aside.
Cut the bread slices in round form using ring
mould or bowl.
Whisk the fresh yogurt in separate bowl. Heat
the oil in tadka pan.
When oil is hot enough, add mustard seeds,
curry leaves and red chilli powder. Pour the tadka in yogurt and salt. Mix well.
How to
Heat the non-stick tawa and grease with
little oil.
Place the one aloo tikki and cover with bread
slice and spread curd paste on the top of bread slice.
Cover the pan with lid and cook for two
minutes. Do same with remaining material.
Serve hot bread idli with chutney.
You can add chopped onion also while
preparing potato cakes and adjust the spices as per taste. You can replace the white bread with brown or
multigrain if health conscious.

Mango Lemoande| Summer Special Mango Drink

Mango lemonade is a cool and refreshing drink
in this summer. It has contains both flavor of mango and lemon. Mango has lots

1 Lemon
Sugar as per taste
1/2 Tsp. Black Salt
1 Litre Soda water
Few Ice-cubes
Lemon Wedges for Garnishing
Mango Wedges for Garnishing
Wash and peel the mangoes. Chop and blend the
mangoes with sugar as puree form.
Add lemon juice, black salt and mix well.
At the time of serving, add soda water and ice
cubes in pitcher.
Garnish with mango wedges and lemon wedges
and serve chilled.
