Cornmeal Cake/ Cornmeal Dhokla

Ingredients
1½ cup Cornmeal flour (makki ka aata)
1 tbsp. semolina (suji)
1¼ cup water
1 tbsp. oil
2 tsp. lemon juice
1¼ tsp. fruit salt (Eno)
¼ tsp. meetha soda
1 tsp. salt
3 tsp. sugar
2 tbsp. chopped green coriander
2 tbsp. sweet corn
Method
Mix all ingredients in same bowl except Eno. Beat till smooth. Add water more if necessary for till smooth paste. Add the fruit salt, stir gently and pour immediately into greased tin
and place in the steamer or pressure cooker, and close tight steamer for 15-20
minutes. Remove the tin from the steamer and keep aside till cool. Garnish with green coriander and sweet corn.

Orange Twister

Mocktails are mock cocktails, or those that do not contain any alcohol.
Any drink recipe can be modified by simply leaving the alcohol out, however
these recipes are some of the more common mocktails. These non-alcoholic drinks
are great for serving the entire family and a nice alternative for party guests
who prefer not to drink alcohol. Under mocktail, we merge 2-3 flavour together
and serve in one glass. One of mocktail, I was prepared on occasion of my blog
1st Month Anniversary.

Ingredients
1 glass orange juice
1 glass soda or 7up cold drink
2 tsp. lemon juice
½ tsp. black salt
A pinch of chaat masala
Ice cubes
Shaker
Method
In a shaker add all ingredients except ice cube and soda and mix well. Now
add ice cubes and soda and again shake it. Serve in mocktail or martini glass. For
garnish add or use lemon wedges.
Tips: Never fill full glass, just fill 1/2 half glass with drink.

Chana Dal Chutney

Red
gram Chutney, It is specially made for to serve with Masala dosas. You will have
to try it.
If you want
the chutney color bright yellow or orange, use only red chillies with some paprika.
I used dried red chillies, few dry curry leaves and mustard seeds in tempering.
 Adjust the salt, chillies and tamarind
according to your taste.



Ingredients
  • ½ cup
    chana dal (red gram) soaked in water for 3-4 hours
  • 3-4 curry
    leaves
  • 2-3 dry
    whole red chilies
  • ½ tsp.
    mustard seeds
  • 1 tbsp.
    ghee
  • A pinch of
    turmeric powder
  • ½ tsp. red
    chilies powder
  • Few drops
    of lemon juice
  • Salt to
    taste
Method
  • Grind soaked
    chana dal into mixer and make fine smooth paste.
  • Now add
    salt into and place into bowl from grinder.
  • Heat the
    pan into med. Flame, add ghee, red chilies, curry leaves, mustard seeds and
    turmeric powder in to ghee and prepare tadka for chutney.
  • Add tadka
    into smooth paste of chana dal.
  • Add lemon
    juice also. Serve this chutney with pancakes (dosa, chilla, chapaati etc).

Orange Sooji Halwa| Orange Recipes| Indian Halwa Recipes

Sooji or suji ka
halwa is prepared with suji, ghee and sugar but I was adding orange juice and
gram flour in it which enhance the taste more.  Here in suji ka halwa, I have used orange juice for interesting and
different taste and used gram flour for crispiness. This is very delicious and
easy dessert in North India. If you are sweet conscious, it’s a prefect taste
for you which gives tangy and sweet both punch to tastebuds.
Preparation Time: 10 Minutes

Ingredients
1 Cup Semolina/ sooji
1 Cup Clarifying Butter/ Desi Ghee, Melted
1 Cup Sugar
1 Cup warm Water
2 Cup Orange Juice
1 Tbsp. Gram Flour/ Besan
Few Raisins and Almonds, for garnish
Instructions:
Add
melted ghee in heavy botttam pan, add sooji and besan in to ghee. Keep stirring
it on medium heat.
When
the color changes and ghee come up add warm water and orange juice by
constantly stirring.
Now
add sugar in to semolina. Leave it on high flame the ghee
will come up leaving its sides.
Take
off the flame. Garnish with almonds and raisins. Serve hot Orange Sooji Halwa.

FIRST MONTH ANNIVERSARY

DEAR FRIENDS
Today marks 1
month since I have started “Preeti’s kitchen life! YAY! How exciting! I have
really enjoyed every minute of it!
In Dec. 27, 2011
when I created this blog, I didn’t know much about blogging. Because of this I
wasn’t sure how much I would be able to sustain in the blogging. Still I decide
to go for it because there was no loss in indulging in this experience even if
it fails. So I create my account on blogspot.com.
After creating a
blog, it took me two days to understand different features and widget in blog.
But I was clear with my blog topic that is all about cooking because my family
and friends always like whatever I cook, they are encourage me a lot for start
posting my recipe in BlogSpot. My first post “why I create this” was publishes
on 28 Dec.2011, that is exactly one month ago. After that my first recipe
(officially) was published in “Preeti’s kitchen life” on 29 Dec. 2011 as “APPLE KHEER”. I was chosen this recipe because we all know “Hara kam ki shuruwat
meethe se ki jati hai”. Since this was my first post I was over excited about
it. Now after a one month, I was post more than 40+ recipes in blog and more
than 20+ friends in my blog which is a great achievement for me with in one
month.
When I start
blogging, few bloggers who are new for me but still they are very sweet by
nature and helps me a lot, always appreciating me, so I want to say thanks to
all (Aarthi, Srivalli, Ramya, Umm mymoonah and so more).
That’s it for
now. Thank you all for your love and support, will try to do much better in my
blog. Your comments are welcome about your experience with this blog.
To celebrate my
first month anniversary, I ‘m doing a double post- let’s start with first
recipe for BM#12 series PANEER KULCHA.
And second is combo meal of celebration on the  occasion of 1st month of blog anniversary.

Stuffed Paneer Kulcha’s

Today I post Stuff
Paneer Kulcha under street food category. Kulcha is an All Purpose Flour Bread.
It is normally eaten raw with Chole. The other format is to make a
sandwich stuffing it with Paneer and it is quite popular with teenagers in
North India. Here I explain a simple
and easy way to make it at home.

It can be eaten in evening or morning snacks
with green chutney or tomato ketchup. 



Ingredients
  • 4 kulchas (readymade)
  • Pure desi ghee for shallow fry
  • Green chutney
  • Tomato ketchup
For stuffing
  • 2 cup crumbles cottage cheese (paneer)
  • 2 medium size onions (chopped)
  • 2 medium size tomatoes (chopped)
  • 2 green chilies (fine chopped)
  • 1 tbsp. fresh green coriander (chopped)
  • Salt to taste
  • ½ tsp. red chilies powder
  • 1 tsp. coriander powder
  • ½ tsp. turmeric powder
  • ½ tsp. amchoor powder
  • ½ tsp. cumin seeds
  • 2 tsp. olive oil
  • 1 tsp. pure desi ghee
Method

For stuffing
  • Heat
    the oil in a pan on a medium flame, till hot. Add the cumin seeds and fry till
    splutter.
  • Add
    the onions and fry till soft. Now add the green chilies and tomatoes and cook
    for 10 minutes.
  • Add
    all the powdered spices and mix well. Saute for 2 minutes.
  • Add
    paneer. Mix well and cook for 2 more minutes. Turn off fire. Garnish with the
    chopped fresh coriander.
For stuff kulcha
  • Heat
    the tawa on medium flame and grease with little ghee.
  • Roast it till both
    the surface turns brown in color.
  • Now spread stuffing
    over the kulcha and cover with another one.
  • Now again roast it
    for 2 minutes on tawa (add little ghee more ) for more crispy and tasty.
  • Prepare all the
    kulchas in the same manner.
  • Serve hot kulchas with chutney or chole.

Street food event by Rosh

Instant Paneer Chilla

Today I post under
street food category for blogging marathon in paneer theme. Instant paneer
chilla, it’s an instant and quick recipe in which batter prepared with rice and
gram flour and stuffing makes with paneer, onion, tomatoes. Its crispy and soo
tasty.

Ingredients
  • 1/4 cup rice flour
  • 1 cup gram flour
  • 1/2 cup milk
  • 1/4 tsp. meetha soda
    or soda bi carbonate
  • Salt to taste
  • 1 cup cottage cheese
  • 1 medium sized onion
  • 1 medium sized
    tomato
  • 1 green chilies
  • Chopped fresh
    coriander
  • 1/4 tsp. carom seeds
  • 1 tsp. red chilies
    powder
  • 1/4 tsp. chaat
    masala
  • Pure desi ghee
Method

For stuffing
  • In a bowl, add crumbled cottage cheese, fine chopped onion, fine chopped tomato,  chopped green chillies, chopped fresh coriander, salt, red chilies
    powder and mix well.

For batter

  • In a bowl, add rice
    flour, gram flour, salt, red chilies powder, carom seeds, meetha soda.
  • Now add milk slowly
    for making smooth batter if batter still thick, add little water so that there
    should be no lumps in it.
  • Add water till
    it comes to a dropping consistency or just like dosa batter. Now keep it aside.
  • Heat the non-stick-
    tawa, then turn the heat on medium. Put little ghee on tawa & spread 1
    tbsp. of batter evenly on it.
  • Put some more oil on
    the top & turn it upside down, so that it should cook inside also.
  • Let it be golden and
    crispy from both sides. Now add 1 tbsp. stuffing on the chilla and fold it.
  • Repeat the same with
    rest of the batter.
  • Serve hot with green
    chutney.

Masala Cheese Toast

Today I post under snacks
course. It’s tempting as well as crispier toast cum sandwich, easy to cook and
everyone like it. In an appeal, its looks like a pizza.

In this, i was used two type
of cheese; one is our Indian traditional cheese (paneer) and second is
processed cheese, which mixes with capsicum and salt, pepper well.

Spread over bread and
cook on the tawa. This is a perfect meal for breakfast or evening snacks. Enjoy



Ingredients
  • 4 bread slices
  • 1 tbsp. Red tomatoes chopped in thin strips
  • Amul butter

For stuffing
  • 2 tbsp. green capsicum (fine chopped)
  • 1/2 cup crumbles cottage cheese
  • 1/4 cup grated Amul processed cheese
  • 1tbsp. onion chopped
  • 1 tbsp. chopped fresh green coriander
  • 1 chopped green chilies
  • Few drops of lemon juice
  • Salt to taste
  • 1/2 tsp. black pepper powder

Method
  • Mix well all ingredients of stuffing in a bowl.
  • Spread this mixture
    over the bread slices.
  • Place tomatoes
    strips over the filling.
  • Heat the non-stick
    tawa and grease the butter.
  • Place the bread on
    the non-stick tawa and cook till golden brown and crispy. Sprinkle chat masala
    over the bread.
  • Serve hot with sauce
    and drink. 

Tips: 

  • You can use brown bread also instead of white bread.
  • You
    can cook in oven or grill pan also instead of non-stick tawa.

Republic Day 2012




HAPPY REPUBLIC
DAY TO ALL

Republic Day is a national holiday that is
celebrated every year with big enthusiasm. The Constitution of India was
enforced on 26th January, 1950 marking a historical moment in the Indian
history. Hence, this day is honoured with great joy, pride across the country
as India was also declared a sovereign, democratic and republic state on this
very day. The day calls in for grand celebrations, which are evident from the
massive parades, cultural programs, recitation of patriotic poems and singing
and playing of patriotic songs throughout. Though every Indian state holds its
celebrations, but the capital of city of New Delhi witnesses a grand parade at
India Gate, near the President’s Palace.

Hello Foodie
On the very special occasion i was prepared some main course and dessert on the theme of Indian flag (Tiranga form). Under this, I was prepared tiranga puri’s, tiranga rice and dessert. For accomplishment also make green chutney, white curd and orange aloo bhaji. Hope all of u like this!

Tiranga Puri’s

On the very special occasion i was prepared some main course and dessert on the theme of Indian flag (Tiranga form). Under this, i was prepared tiranga puri’s, tiranga rice and dessert.

Ingredients

  • 6 cup wheat flour
  • 1 tsp. salt
  • 3 tsp. ghee
  • Water for soft dough
  • 1 pinch of orange food color 
  • 1 tbsp. spinach purees (blanch and grind in mixer)
Method
For red
color dough
  • Add 2 cup flour, ¼ tsp. salt, 1
    tsp. ghee, and orange color water.
  • Make dough for puri’s
For
plain dough
  • Add 2 cup flour, ¼ tsp. salt, 1
    tsp. ghee, and enough water for dough.
For
green color dough
  • Add 2 cup flour, ¼ tsp. salt, 1
    tsp. ghee, and spinach puree and make dough for puri’s.
  • Now keep aside this three color
    dough for 15 min.
  • Heat the oil in deep and thick
    bottom pan.
  • Roll out the one portion of the
    dough, by using rolling pin and deep fry in oil.
  • Same do as with red, plain,
    green dough.
  • Serve this colourful puri’s
    with aloo bhaji and green chutney
