Avocado Hummus Dip | Homemade Dips

This time i made Avocado Hummus (hummus plus avocado in one dish) and it is the smoothest and creamiest hummus. I love this recipe especially with wraps and fries. It’s healthy dip which made with ripe avocado, chickpeas and tahini. At the time of making, don’t have enough time to prepare tahini paste. So i used whole roasted sesame seeds in mixture.





Try this new and delicious hummus with avocado with chips, crackers, pitas or as a sandwich and wrap spread. If you like more green color in dip, you can add fresh cilantro or basil also.

Avocado Hummus Dip | Homemade Dips

Ingredients:
2 Medium Avocado, Fully Ripe (Cored and Peeled)
2 Cup Chickpeas, Boiled
2 Tbsp. Sesame Seeds or Tahini
2 Garlic Cloves, Peeled
3 Tbsp. Olive Oil
Salt To Taste
Pepper Powder to Taste
3 Tbsp. Lemon Juice

Instructions:
Add chickpeas, olive oil, tahini, lemon juice, garlic, salt and pepper in a food processor until to smooth.
Now add peeled and deseeded avocado pulp and mix until smooth and creamy.
Serve in bowl with extra olive oil and pepper powder or flakes. Serve with chips or green veggies.

Mexican Guacamole | Homemade Mexican Avocado Dip

Guacamole originated in Mexico but now popular all over the world not as a spread or dips only but also as a topping and spread in sandwiches and salad.







Guacamole is avocado based dip which traditionally made by mashing ripe avacados and rock salt and adding flavor of raw tomatoes, onions, lemon juice, fresh coriander also known as cilantro and fresh jalapenos. But sometimes people add sour cream also for creamy texture, it’s optional.




As the major ingredient of guacamole is raw avocado, the nutritional value of the dish derives from avocado vitamins, minerals and fats, providing dietary fiber, several B vitamins, vitamin K, vitamin E and potassium.

Mexican Guacamole | Homemade Mexican Avocado Dip





Preparation Time: 10 Minutes
Cooking Time: 0
Servings: 2 Cups

Ingredients:
2 Avocados, Ripe
1/4 Cup Red Onion, Finely Chopped
1/4 Cup Cherry Tomato, Chopped
2 Tbsp. Jalapeno, Canned
Fresh Coriander, Chopped (Handful)
1 Lemon Juice
1 Tbsp. Extra Virgin Olive Oil
Salt to taste
Black Pepper to Taste


Instructions:
Deseeded the avocados and scoop the flesh in bowl and mix it until fine and well combined like paste. For better consistency you can use blender also.
Add all the remaining ingredients and mix well.
Keep in freeze for atleast 1hour before serving.
Serve chilled avocado dip with nacho chips or fries.


Notes: Adjust the seasoning according to taste. You can use normal green chilies and tomatoes instead of jalapenos and cherry tomatoes.

Homemade Enchilada Sauce | Sauce Recipes

When we made sauces at home, the taste comes fabulous rather than store brought. This authentic red color enchilada sauce makes tasty and delicious homemade baked enchiladas.




For this authentic sauce, first we have to prepare roux for the base by using flour and oil and then add spices and tomato paste till to thicker consistency.  You can adjust the spice level according to taste. Even you can store this sauce for further use in freeze.







It’s delicious and makes amazing cheesy enchiladas and also great topping on French fries.



Homemade Enchilada Sauce | Sauce Recipes

Preparation Time: 5 Minutes
Cooking Time: 20 Minutes
Servings: 3 Cups
Category: Sauces / Spread
Cuisine: Mexican
Cooking Method: Boiling

Ingredients:
2 1/2 Cups Vegetable Broth
3/4 Cup Tomato Puree
1 1/2 Tbsp All Purpose Flour
1 Tsp. Dried Oregano
1/2 Tsp. Garlic Powder
1/2 Tsp. Cumin Powder
3 Tbsps. Red Chili Powder
Salt to Taste
1/4 Tsp. Black Pepper Powder
3 Tbsps. Olive Oil
1 Tsp. Sugar


Instructions:
Heat the oil in a saucepan, add flour and whisk until mixture is smooth. Stir continuously to avoid lumps.
Add chili powder and cook for another one minute continuously. Add the mixture in stock and whisk it.
Add all ingredients in broth mixture and mix it gently.
Bring this mixture to a boil, after one two boil then reduce the flame to low and cook 15-20 minutes until sauce reach to thick consistency.
Adjust the seasoning and serve.

How to Store
You can store this sauce in airtight jar for 2 weeks, keep this sauce in freeze.



Notes:
You can reduce the quantity of chili powder according to tastebuds.
For vegetable broth, you have to cook 1 cube in 600ml water. You can use chicken stock also.

Ingredients:
2 Cup Baby Potatoes, Boiled and Halves
1 Cup Broccoli, Florets
1/2 Cup Bell Pepper (Red, Green, Yellow), Diced

1 Tsp. Chili Flakes to Taste
1 Tsp. Oregano
4 Tbsp. Olive Oil
1 Tsp. Lemon Juice


Instructions:
Boil the baby potatoes and cut into halves.
Heat the oil in a broad pan and cook potatoes for 5 minutes or until to golden.
Remove the potatoes in separate plate and keep aside.
Add the broccoli, bell pepper, oregano, salt, pepper powder and chili flakes in same pan and sauté for 5 minutes on medium flame or till to tender.
Add cooked potatoes and toss gently, cook few seconds more on medium flame.
Add lemon juice and give a quick stir.
Serve immediately with chappati.

Ingredients:
2 Cup Baby Corn, Wash and Diced

1 Tsp. Cumin Seeds
Salt to Taste
Black Pepper to Taste
1/2 Tsp. Five Spice Powder or Garam Masala
1 Tbsp. Olive Oil


Instructions:
Heat the olive oil in a non-stick pan. Add cumin seeds, when they start splutter.
Add green chilies, ginger paste and sauté for 1 minute.
Add onion, bell pepper and spices, sauté for 5 minutes. Then add chopped baby corn.
Sprinkle little water and give a quick mix. 
Cover it and cook for next 5-7 mintues or till to tender.
Serve hot baby corn stir fry with rice or roti.


Notes: Check the dish in between cooking and gently stir once or twice, to avoid burning at the bottom.

No Bake Biscuit Pudding | Quick Eggless Biscuit Strawberry Delight

This recipe is really quick dessert recipe, simply made with multiple layers of biscuits, chocolate and strawberries. All three ingredients combine to make a delicious and satisfactory dessert for your sweet tooth. If you want more presentable dessert or want to prepare in few seconds, then you can serve as individual serving also.









Here are some switches also available in this recipe; you can change the ingredients according to availability or taste. You can use whipped cream, custard mixture, ice-cream whatever you like instead of chocolate pudding. You can use any fruit which you prefer i.e. mango, pineapple, kiwi, berries and more. You can use Marie biscuits also. You can use juice also for dipping biscuits if you are not coffee lover.

No Bake Biscuit Pudding | Quick Eggless Biscuit Strawberry Delight

Ingredients:
2 Cup Milk
2 Tbsp. Chocolate

1/2 Cup Warm Water
1 Tsp. Sugar

16 krack Jack Biscuits
Strawberries, Sliced
Grated Chocolate, for garnishing


Instructions:
Mix the all ingredients of coffee concoction together, use this for dipping your biscuits.
Dip the eight biscuits in the coffee concoction, remove immediately and arrange them on serveware.
Spread the chocolate pudding over the biscuits and then arrange the strawberries slices on the top.
Place the dipped 8 biscuits again and immediately spread chocolate pudding and strawberries over the first layer.
Finally top it with remaining pudding and refrigerate for 1 to 2 hours.
Garnish with chocolate shaving and serve chilled.



Notes:

Eggless Bread Pudding| Baked Bread Pudding | Eggless Pudding Recipes

Second recipe I choose under pudding theme i.e Eggless Bread Pudding. Th.is dessert is easy and absolutely delicious in taste and appeal. It is easy to assemble with few ingredients and also good for your sweet tooth.

Bread pudding is a bread based dessert popular in many countries. In India it’s known as double ka meetha and also known as budin or pudin in many other countries.





Bread pudding is made with stale bread and milk or cream, generally containing eggs, a form of fat such as oil, butter or suet, and depending on whether the pudding is sweet or savory, a variety of other ingredients.

Sweet bread puddings may use sugar, syrup, honey, dried fruit, nuts, as well as spices such as cinnamon, nutmeg, mace, or vanilla. The bread is soaked in the liquids, mixed with the other ingredients, and baked.

Savory puddings may be served as main courses, while sweet puddings are typically eaten as desserts.


Eggless Bread Pudding| Baked Bread Pudding | Eggless Pudding Recipes


Preparation Time: 10 Minutes
Cooking Time: 35 Minutes
Servings: 4
Category: Dessert
Cuisine:  Fusion
Cooking Method: Baking


Ingredients:
8 Slices Bread
2 Cup Milk
1 Tbsp. Custard Powder
1/2 Cup Sugar
1 Tsp. Cardamom Powder
Few Drops of Vanilla Essence
1 Tbsp. Butter
Raisins and Almonds, For Garnishing



Instructions:
Add the milk in saucepan, add custard powder, sugar and butter and mix well to avoid lumps.
Now cook the mixture on medium flame, till to sugar dissolve completely and custard consistency little thick.
Remove from the flame and add vanilla essence and cardamom powder. Allow to cool at room temperature.
Cut the bread slices into small cubes. Soak the bread in the milk.


Grease the ramekins with butter and pour the batter in ramekins.  
Topped with raisins or almonds whatever you like.
Bake it in a preheated oven at 180 degree cel for 25-30 minutes.
Enjoy this lovely and tasty pudding with extra spoon of fruit compote.
