Review for DRAMA Upside Down Bar @ Rajouri Garden, Delhi

Drama Upside Down Bar is the latest upcoming new restaurants cum bar in Rajouri Garden, West Delhi region. On 26th August 2016, I got an opportunity to visit this new restaurant with some fellow foodies.

Name of restaurant reflects the theme of this outlet. Whole interior of Drama is loaded with books, show pieces, table lamps and many more things is upside down means all ulta pulta with full on mellow drama.

You can get comfortable seating arrangements with nice, peppy music with good ambience. Even you can get lip smacking food platters with great service. This restaurant is spread over three floors with roof top seating. It’s a great place to hang out with friends or families.

All cuisines or dishes are available in very innovative style means great presentation with interesting name. Lots of varieties available in mocktails and cocktails… overall taste of beverage and starters were good, highly recommended to all.

For starters we had: 
Grilled Pinwheels: Bite sized cocktail vegetables and cheese sandwich, available with chicken and prawns also for non-vegetarian.
Baba Dhanoush: Peppers, Eggplants and garlic labneh & tomatoes toasted between multigrain loaf served with hummus and pickled carrots.
Tanchurian: Manchurian Balls skewed with grilled onion, tomato and bell peppers
Bambaiya Soya Wings: Soya chaap nicely marinated with spices and cooked over grill.
Kurkurey Tandoori Paneer: Simply authentic malai paneer tikka served with crispy brown onion, rice papad and dip inside a cage. It’s a mouth melting paneer and completely delicious.

Bun Faad Paneer: chili garlic cottage cheese mixed with soya nuggets served in big bun and cut on the top. Pasta, Railway kebab, Cheese nachos with rajma and many more items in starters I had tried.

Main Course:
Chowka Paneer Patiala: Delicious and yummy paneer cooked in Patiala style along with peppa dal and butter naan.

Agni Lava Brownie: white forest mousse and naugat flambéed with white rum, served on sizzler.
Berry Ananas Roshogulla: Rosgulla cut into slices and garnished with chopped pistas and dried edible rose petals.

Vegetable Bread Dhokla

Dhokla is steamed savory cake which made with gram flour, it’s a soft, spongy and tangy flavored recipe. Dhokla is staple food in Gujarati Cuisine, without dhokla Gujarati thali is incomplete. This time I tried new version of dhokla in my kitchen.

For this recipe, you have to cut the bread slices into disc form and serve the dhokla on the top of bread as a snack. It’s a healthy meal includes mixed vegetables, bread slice and dhokla which serve with Indian dip.

Veggie Bread Dhokla | How to Cook Vegetable Bread Dhokla

Preparation time: 10 Minutes
Cooking Time: 15 Minutes
Servings:  6 Pieces

6 Bread Slices
1 Cup Mixed vegetables (Carrots, capsicum, corn, onion), Chopped

Dhokla Batter ingredients:
1 Cup Gram Flour/ Besan
2 Tbsps. Semolina/ Sooji
Salt to taste
1/2 Lemon Juice
1 Tsp. Sugar
1/2 Tsp. Eno
Water, for running batter

Tempering Ingredients:
1 Tsp. Oil
2 Tsp. Mustrad Seeds
Handful Curry Leaves
1/2 Lemon Juice
1/4 Tsp. Salt
1 Tsp. Sugar
1/2 Cup Water

Mix all the ingredients of batter in large bowl and keep aside.
Heat the oil in tempering pan, add mustard seeds and curry leaves.
When they start splutter, add water, salt, sugar and lemon juice.
Boil it for few minutes and keep aside to cool at room temp.
Cut the bread slices into round form using cookie cutter.
Now grease the bowl with little oil or butter.
Place the bread slice in each bowl.

Arrange the chop vegetable in layer on the top of bread.
Pour the dhokla batter in each bowl and place in steamer.

Steam it for 15- 18 minutes and garnish with tempering.
Serve with ketchup or Indian chutney.

Arbi Masala Gravy

Arbi Masala gravy is just similar to any other masala gravy recipe like aloo matar, matar paneer and more. You can use the cornflour only for this recipe. To enhance the taste of gravy, you can add whipped curd after onion tomato paste. You can use aloo, mooli, jimmikand and more vegetable to cook same recipe instead of arbi.

Arbi Masala Gravy | How to prepare Arbi Masala Gravy

Preparation Time: 15 Minutes
Cooking Time: 20 Minutes

250gm. Taro Roots/ Arbi
1 Tbsp. Gram Flour/ Besan
1 Tbsp. Cornflour
1/2 Tsp. Salt
Oil for frying

For Gravy
1 Medium Sized Onion, chopped
2 Medium Sized Tomatoes, chopped
2 Green Chilies, chopped
1 Tsp. Ginger, chopped
1 Tbsp. Vegetable oil/ Ghee
1 Tsp. Cumin Seeds
1 Tsp. Coriander Powder
1 Tsp. Turmeric Powder
Salt to Taste
1 Tsp. Red Chilies Powder
1/2 Tsp. Garam Masala/ Five Spices Powder

Wash and boil the taro root till to little tender or soft.
Now peel and cut into slices. Sprinkle the flour and salt on slices and rub it.
Heat the sufficient oil in pan and fry it till to golden and crisp.
Grind the tomato, onion, green chilies, and ginger together in mixer.
Heat the oil in separate wok and add cumin seeds.
When they start splutters, add tomato onion ground paste and spices.
Cook till to tomatoes leaves oil, add water to adjust the consistency.
Add fried slices and boil it for 5 minutes.
Garnish with coriander leaves and serve hot.

Vegetable Dalia Using REDMOND’s Smart Multicooker

Really excited when I got a chance to try out one of my favorite recipe in REDMOND Smart Multicooker RMC-M20 from REDMOND and publish my opinion of it.

REDMOND Smart Multicooker RMC-M20 is really impressive gadget for every kitchen which makes my cooking easier and simplest. This appliance replace the whole range of kitchen appliances included oven, gas stove, yogurt maker, deep fryer, steamer, microwave, fondue pot and bread maker which save your money as well as space. This smart multicooker comes with 10 automatic cooking programs included RICE/ GRAIN, PILAF, FRY, OATMEAL/ DESSERT, BAKE/BREAD, STEW, SOUP, STEAM/BOIL, YOGURT/ DOUGH, BEANS, KEEP WARM.

It has “Time Delay, Reheat and Keep Warm” function also available for 24 hours. The Reheat function warms up a cold meal. The Keep Warm Function to keep your food warm for up to 24 hours. Cooking bowl which comes with the cooker has nonstick coating by Daikin, so it is easy to clean and dishwasher safe. This cooker comes with a steaming container, serving spoon, measuring cup, stirring spoon, manual book and recipe booklet.

Vegetable Dalia is a healthy one pot meal which includes mixed seasonal vegetables, broken wheat and green lentils. Broken wheat is generally known as dalia or daliya in the north region. Broken wheat is used for making various sweet and savory Indian recipes. Dalia is considered one of the simplest and healthiest breakfast or main course meal.

Most of time people make it like porridge or running consistency but I prefer slightly thick like pulao with full on seasonal vegetables with fresh curd. I prefer carrots, peas, onion, potatoes, corn in vegetable dalia. You can add little pav bhaji masala for making little spicy as well as flavorful dalia.

Vegetable Daliya/ How to cook Vegetable Dalia Pulao

Preparation Time: 15 Minutes
Cooking Time: 35 Minutes

1 Cup Broken wheat / Daliya
1/2 Cup Split Green Gram Lentils / Green Moong Dal
1 Potato, Peeled and chopped
1 Tomato, chopped
1 Small Carrot, peeled and chopped
1 Small Sized Capsicum, chopped
1 Medium Sized Onion, chopped
1/2 Cup Green Peas & Corn Kernels
2 Green Chilies, finely chopped
Salt to Taste
Red Chilies to Taste
Coriander Powder

Tempering Ingredients

1/2 Tsp. Cumin Seeds
1 Tsp. Mustard Seeds
Few Curry Leaves
Pinch of Asafoetida
1 Tbsp. Vegetable Oil
Green Coriander, chopped for garnishing

Wash and Soak the dal in 1/2 cup of water for 15-20 minutes.
Chop all the vegetables separately and keep aside.
Heat the oil in a REDMOND multicooker rmc-m20 and press fry.

Add the tempering ingredients first in the hot oil.
When they start splutters, add chopped onion, green chilies and sauté for 2 minutes. 
Now add all the vegetables (potatoes, tomatoes, peas, corns, capsicum and carrot) together with salt, red chilies and coriander powder and saute for 10 minutes to remove the rawness.
Add the dalia with 4 cups of water, close the lid and cook the daliya. Press rice and grain mode for next 25 minutes till the dalia is cooked well.
Open the cooker, if the dalia has not cooked properly, then add some more water and cook for few minutes more.
Garnish with green coriander leaves and serve it with pickle and curd or buttermilk.
