The Cafe Spice Event with Giveaway

After a long back, Today Simplytadka.com announces one more food contest with giveaway for our lovely readers. First of all big thanks to all my readers and friends for support, Simplytadka.com completes 3 years and gets more success in blogging world. To celebrate this success, we announce one contest. 

For this event, we will give two cookbooks as giveaway to two winners which choose by us….. Cook book is “The CafĂ© Spice” written by Chef Hari Nayak. Thanks Berkeley Books for sponsoring this giveaway for my readers.

South Asian Food Festival as “SASSIAN Journey”

Cross Cultural collaborations was conducted four days South Asian festival as “SASSIAN Journey” on 28-31 March, 2015 at The Ashoka Hotel. This festival was hosted a lotus bazaar, which was included a series of trans-disciplinary workshops, events, performances, symposia, exhibitions and fests. The bazaar was offered space for direct retail to a selected few artists, artisans and cultural enterprises from all 9 South Asian countries attempting to connect the above to the global market.

The objective behind this event was increased employment and accelerated growth and also enhances regional integration and cooperation amongst the 9 South Asian countries- India, Pakistan, Maldives, Nepal, Bhutan, Bangladesh, Burma, Sri-Lanka and Afghanistan.  It was represented some of India’s and South Asia’s best design led interventions by leading NGO’s, craft practitioners, designers and artists.

South Asia is one region where eating habits in most of the countries shares a lot of commonality. To encourage and promote the cuisine from different South Asian countries, Asian Heritage foundation and Self-Employed Women’s Association launched one movement which known as “SASIAN Journey”. Lotus Bazaar was also host South Asia’s first food exhibition named “Sanjha Chulha” means common kitchen, curated by Dr. Pushpesh Pant to promote the incredible variety of local and regional cuisines of South Asia showcasing the diversity of culinary art, where nine countries displayed mouth-watering and traditional cuisines.

Senior executive chef Mr. Rajan Loomba explained the whole concept about Sanjha Chulha and why they planned to launch this South Asian Food festival, where all authentic cuisines from nine South Asian Countries. Thanks to Chefs and Ms. Kinni's team through which I got a chance to taste all the mouth-watering and authentic dishes from South Asian Countries. They were served Murgh Rehana, Gulnar Biryani, Paneer Peshwari, Tea, Afghani Naan, Pol Roti, Vegetarian Momos, Phirni as dessert and some more Non-vegetarian Dishes from menu in our plate. All recipes were awesome in taste and lip-smacking. Love to interact and chitchat with senior chefs of Hotel Ashoka and other Co-bloggers on one table.

Sweet Corn Curry

Restaurant style sweet corn curry is tasty and lip smacking recipe which goes perfectly with Indian breads like paranthas or naans. I prepared this curry with gravy of tomatoes, onion and capsicum. As I’m big lover of sweet corns, so I tried this time sweet corn curry with lacchaa parathas and raita in lunch menu. I made tomatoes, chilies, ginger and cashews based gravy which gives rich and thick texture to gravy.

Preparation  Time: 15 Minutes
Cooking Time: 20 Minutes
Servings: 4
Category: Main Course

2 Cups Sweet Corn Kernels
1 Large Sized Onion
2 Medium Sized Tomatoes
1 Large Capsicum
2 Green Chilies
1 Tsp. Ginger
5-7 Cashew Nuts
2 Tsp. Kasuri Methi
2 Tbsp. Cream
1/2 Tsp. Turmeric Powder
2 Tsp. Coriander Powder
Red Chilies Powder to taste
Salt to taste
1/4 Cup Milk
1/4  Tsp. Garam masala
2 Tbsp. Olive Oil
Coriander Leaves, for garnishing

In grinder, add tomatoes, green chilies, ginger, soaked cashews and grind till to ground paste.
Heat the olive oil in saucepan and add cumin seeds. When they starts splutter, add chopped onion and capsicum and saute till to soft and cooked.
Add tomato ground paste and cook few minutes till to soft. Add kasuri methi, turmeric powder, coriander powder, red chili powder and salt and cook till to oil separates.
Add boiled corns and 1/2 cup of water. Cover with lid and cook on low flame for 10 minutes.
Add fresh cream and mix it. Add garam masala and adjust the seasoning as per taste.
Finally garnish with coriander leaves and serve hot corn curry with Indian flatbread or pulao.

Notes: You can avoid the capsicum in this curry as per taste and If you are calorie conscious, then you can use almonds instead of cashews and yogurt instead of cream.

Chili Cheese Toast

Chili cheese toast is easy and tempting recipe which made with onion, capsicum and cheese. Perfect option breakfast or evening snack recipe, you can add oregano and chili flakes for more flavorful. It is two step recipes, one is mix the ingredients in one bowl and spread on bread slices and second grill in oven for 10-15 minutes till to cheese start melts.

Servings: 4 Pieces

4 Bread Slices
1/2 Cup Capsicum, Chopped
1/2 Cup Onion, Chopped
2 Green Chilies, finely chopped
2 Cup Mozrella Cheese, Grated
Red Chili Flakes to taste
Salt to taste

Preheat the oven at 250 degree on grill mode.
Combine all the ingredients (except cheese) in a bowl, and mix well.
Arrange the bread slices in baking tray and spread the onion mixture evenly.
Spread the cheese evenly on the top of each bread.
Place the tray in oven and grill it for 6-8 minutes till to cheese starts melting.
Remove the bread from the oven and serve hot toast with sauce.
