Methi Matar Pulao | Rice Recipe

Preparation Time: 30 Minutes
Cooking Time: 20 Minutes
Servings: 4

1 Cup Basmati Rice
1/2 Cup Green Peas
1/4 Cup Fenugreek Leaves, chopped
2 Tbsp. Few Coriander Leaves, chopped
1 Onion, chopped
2 Green Chilies, chopped
1 Bay Leaf
2 Cloves
2 Green Cardamoms
1/2 Tsp. Cumin Seeds
1/2 Tsp. Sugar
Salt to taste
1 Tsp. Coriander Powder
2 Tsp. Ghee
2 Cup Water

Heat the ghee in deep vessel, add bay leaf, cloves, cardamoms, cumin and stir it until to splutter.
Add chopped onion and green chilies and sauté until to translucent.
Add fenugreek leaves, coriander powder and green peas and sauté for few minutes.
Add rice and mix it. Add water and salt and mix it.
Cover and cook until the rice is done and water gets evaporated.

To remove fenugreek bitterness, Soak the fenugreek leaves in water with sugar and salt for 10 minutes and squeeze it.

Mooli Ka Raita | Raita Recipes

Raita is a side dish with served with parathas or rice; this time I prepare Mooli Ka Raita or radish curd. For this recipe, you have to combine grated radish with fresh unsweetened yogurt and spices. You can add chopped green coriander and chilies for more flavorful raita. Mooli ka raita comes from Kashmiri cuisine.

1 Cup Radish/ Mooli, Grated
3 Cup Fresh Yogurt, whipped
2 Green Chilies, chopped
2 Tbsp. Green Coriander Leaves, chopped
1 Tsp. Roasted Cumin Powder
Red Chili Powder to taste
Black Pepper Powder to taste
Salt to taste

Beat the yogurt until to smooth and thick consistency.
Add grated and squeeze radish, green chili and coriander in curd and mix it.
Add spices as per tastebuds and serve chilled.

Notes: You can add pomegranate seeds for more colourful raita.

Zucchini Soup| Zucchini Recipes

Hot Soups are probably perfect meal for winter season, but you can enjoy same soup in summer season also as cold version. This time I share zucchini soup with all of you. For this recipe, you have to sauté chopped zucchini with olive oil and onions and then cook with vegetable stock until too soft and tendered, blend it until to smooth and garnish with cream and pepper. Zucchini is one of the very low calorie vegetables; provide only 17 calories per 100 g. It contains no saturated fats or cholesterol. Its peel is good source of dietary fiber that helps reduce constipation and offers some protection against colon cancers. In addition, they contain moderate levels of B-complex group of vitamins like thiamin, pyridoxine, riboflavin and minerals like iron, manganese, phosphorus, and zinc.

4 Cup Zucchini, chopped
1/2 Cup Onion, chopped
1 Tbsp. Olive Oil
1 Tsp. Oregano
Salt to taste
Black Pepper to taste
1/4 Cup Cream
3 Cup Water or Vegetable Stock

Heat the olive oil in pan and sauté onion until to translucent.
Add zucchini, oregano and salt, sauté for 5-7 minutes.
Add vegetable stock or water. Cover and cook for 20 minutes.
Blend this boiled and tendered zucchini until to smooth consistency.
Add cream and mix well. Cook for two minutes.
Serve individual and sprinkle salt and pepper.

Notes: You can sieve the puree after blending, but personally love thick consistency soup with chunky taste.

Aloo Pyaaz Paratha| Paratha Recipe

Potato onion Paratha is everyone’s favorite in my home, which becomes perfect breakfast with mango pickle and fresh yogurt and homemade white butter. It comes from Punjabi Cuisine which makes me hungry anytime. In this paratha, potatoes gives softness and onion gives crunchiness to parathas. 

Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Servings: 4
Category: Flatbread

For Dough
2 Cup Wheat Flour
Salt, pinchful
Water, for dough
Clarifying Butter, for shallow frying

For Filling
2 Medium Potatoes, boiled and mashed
1 Small Onion, finely chopped
2 Tbsp. Green Coriander, chopped
2 Green Chili, chopped
Ginger, grated
1 Tsp. Pomegranate Seeds, dried and crushed
Salt to Taste
1 Tsp. Coriander Powder
Red Chili Powder to taste
Chaat Masala to taste

Knead the semi soft dough with wheat flour, salt and water. Keep aside.
Combine mashed potatoes, onion, green chili, ginger, green coriander, pomegranate seeds and spices together and filling is ready to further use.
Divide the dough into equal portions and roll out each portion into round as chapatti.
Place the 2 tbsp. stuffing and close the edges. Flatten and roll out again in round form.
Heat the griddle on medium flame and place the paratha on tawa.
Cook the paratha on tawa from both sides by greasing desi ghee until to golden.
Serve hot with raita or curry.

Grapes and Banana Smoothie| Smoothie Recipes

During summer days, to beat the heat, smoothies and mocktails are perfect option. This time I prepare smooth and vibrant Grapes and Banana Smoothie. For this recipe, you have to blend the black grapes and banana with milk until to smooth. Its vibrant purple color attracts me a lot.

1 Cup Grapes, halves
1 Banana, chopped
1 1/2 Cup Milk
3 Tbsp. Sugar (As per taste)
Few Ice cubes

Combine all ingredients together in blender and serve chilled in individual glasses.

Notes: You can change the sugar quantity as per sweetness.
If you are calorie conscious, then use honey instead of sugar and curd instead of milk.

Easy Veggie Burger | Burger Recipes

This is a simple and easy way to prepare burger at home for kid’s party, for this recipe first I prepared potato pattices and then filled this pattice with slices of tomatoes, cucumber and onions inside of burgers. It’s a perfect meal of kid’s tiffin or picnic snacks. If you are health conscious then you can replace the potato pattice with paneer and peas.

4 Burgers/ Buns
1 Onion, Slices
1 Tomato, Slices
Green Coriander Dip
Tomato ketchup
Salt to taste
Chat Masala to taste
Black Pepper to taste
Oil for Frying

For Potato Pattice
2 Potatoes, boiled and mashed
1 Green Chili, Chopped
Handful Green Coriander, chopped
Salt to taste
Black Pepper Powder, to taste
Oil for deep frying

Combine the mashed potatoes, chopped chilies and coriander in to separate bowl. Add salt, black pepper as per taste.
Prepare small pattice and deep fry them and remove on kitchen towel to remove excess oil, keep aside. if pattice not bind properly, then you can add 1 tbsp bread crumbs also.
Heat the sufficient oil in wok. When oil is hot enough, deep fry the whole burgers and remove on kitchen towel to remove excess oil, keep aside.

Divide the burger into halves and spread green chutney and tomato ketchup evenly on both side.

Place the onion slice on the top of half burger and put potato pattice, tomato slice and cucumber slice. 
Sprinkle salt, black pepper powder and chat masala. Cover with another half burger and lock with tooth pick.
Serve tasty and simple veggie burger with cold drink and sauce.

Notes:  you can add paneer or cheese slices also in centre of burger.

Capsicum Stir Fry| Capsicum Recipes

Capsicum stir fry is really crunchy and simple to cook recipes, for this recipe you have to saute diced colorful capsicums with chopped tomatoes and spices. You can serve this stir fry recipe as side dish with gravy and flat-bread.

I love capsicum or bell pepper just because of crunchy taste and vibrant colors of yellow, green, red and orange. It contains antioxidants like beta carotene, lutein and zeaxanthin (phytochemicals) and vitamin C. After consumption of capsicum, the body converts beta carotene into retinol, which is one of the most usable forms of vitamin A. 3 Capsicum, cubed
1 Tomato, finely chopped
1 Tsp. Green Chili and Ginger Paste
1/2 Tsp. Turmeric Powder
1/2 Tsp. Red Chili Powder
2 Tsp. Coriander Powder
Salt to Taste
1/2 Lemon Juice
1 Tbsp. Oil
1/2 Tsp. Mustard Seeds
1/4 Tsp. Asafoetida


Heat the oil in pan and add mustard seeds, asafoetida and turmeric powder.

Add ginger chili paste and chopped tomatoes. Sauté until to cooked.
Add coriander powder and red chili powder and mix it.

Add chopped capsicum and cook until to tender.
Add salt and lemon juice and mix it. Garnish with cilantro and serve hot.
