Khubani Ka Meetha or Qubani ka Meetha| Apricot Recipes



Qubani ka meetha or you can say khubani ka meetha is an Indian dessert which prepared from dried apricots and comes from Hyderabadi cuisine. It’s a traditional recipe which very popular in Hyderabadi weddings.

For this recipe, we have to boil the soaked apricots with syrup until they assume the consistency of thick compote or puree form. This dessert is garnished with slivered almonds and served with small scoop of vanilla ice-cream or whipped cream whatever you like.

Khubani is Urdu word for apricot. It’s a simple yet most delicious and rich flavored dessert I had tasted. Apricots are good source of vitamins, irons, fibre and more healthy nutrients. In this recipe, I prefer to use golden Turkish apricots which gives bright and vibrant color to dessert. 




Preparation Time: 8 Hours

Ingredients:
2 Cup Dried Turkish Apricots (golden and seedless)
1/2 Cup Sugar
12 Almonds, chopped
4 Scoops Vanilla Ice cream



Instructions:
Soak the dried apricots in 2 Cup water for overnight or atleast 8 hours.
Heat the non-stick pan on medium flame. Add the soaked apricots with same golden water.
Add sugar and cook until to sugar dissolve completely and apricots become soft and mashy.
Puree the half of apricots in blender and again cook reserved apricots with puree for 4-5 minutes more.
Place the apricot compote in serving bowl, garnish with chopped almonds and serve with vanilla ice-cream scoop or cream.

Banoffee Pie Recipe| Easy Dessert Recipe for SFC# 3



This time I choose Banoffee pie for Sweet fantasy club under fusion dessert, but due to some personal reason did not get sufficient time to cook before due date. Now I prepared this amazing dessert on the very special occasion of Christmas. Banoffee pie is an authentic English dessert which I tasted and love it.



Banoffee Pie is non-bake dessert made from bananas, cream and milk made toffee or dulce de leche. Banoffee is constructed from the two words banana and toffee. I served banoffee in glasses as individual servings and used vanilla ice-cream instead of whipped cream. You can call this recipe banoffee sundae also. Please try this recipe as I’m sure you will like it and share your response with us.

Preparation Time: 1 hour
Cooking Time: 15 Minutes
Servings: 4

Ingredients:
8-10 Digestive Biscuits, crushed
5 Tbsp. Melted Unsalted Butter
2 Ripe Bananas, sliced
400gm Amul Mithai Mate
6 Scoops Vanilla Ice-cream
Chocolate, grated for garnishing



Instructions:
Fill the pressure cooker with water and place the condense milk tin. Cover with lid and cook on high flame. Cook until to one whistle, after whistle, simmer the condense milk for 20-30 minutes in cooker. Remove the tin from the cooker and keep aside to cool. Open the tin using can opener and enjoy dulce de leche for further use. Be careful while preparing dulce de leche. 

Crush the digestive biscuits and fold with melted butter to prepare bottom crust. 
Arrange the digestive biscuits mixture into serving glass or serving bowl.
Arrange the bananas slices on the top of crust and pour the dulce de leche over the banana slices.
Spread the vanilla ice-cream evenly and garnish with grated chocolate and cherry. Refrigerate it and serve chilled.

Notes:
You can use whipped cream or vanilla ice-cream whatever you preferred.
You can use cocoa powder also instead of chocolate powder.

Chum Chum Recipe| Bengali Sweet Recipe for SFC# 3

Cham Cham or Chum chum is a traditional Bengali sweet which is popular all over India, Pakistan and other countries too. These days, it’s available in different colors as pink, white, yellow and with different variation or flavors as pistachios, almonds, creamy and more. It’s a paneer based recipe which coated with coconut powder and garnish with pistachios and almonds flakes.  


For this Dec month, we choose chum chum as Indian sweet under Sweet Fantasy Club Series # 3 series, hope my readers will like it and share views about this recipe under comment section.


Preparation Time: 20 Minutes
Cooking Time: 25 Minutes

Ingredients:
2 Cup Chenna/ Homemade Cottage Cheese
2 Cup Sugar
5 Cup Water
Cardamom Powder, for garnishing
Coconut Powder
Pistachios, chopped for garnishing
Tutti Fruitti, for garnishing



Instructions:
First prepare homemade paneer or cheena, check how to prepare homemade paneer.
Keep the paneer on plate and knead it for 5-7 minutes until to smooth and firm dough. If paneer look dried, then add half teaspoon of milk.
Divide the paneer dough into equal eight portions and roll each portion into flat oval shaped balls and keep aside.
For sugar syrup, you have to add 2 cup sugar and 5 cup of water in pressure cooker. Cook on high flame till to sugar dissolve completely.
Add paneer balls and cover with lid. Cook the paneer balls in pressure cooker until to one whistle, and reduce the flame.
Cook the balls for 7-8 minutes on simmer flame and remove from the stove. Place the ready chum chum into separate bowl to cool.
Remove the chum chums from the syrup and cut into centre to fill stuffing of nuts or mawa if you preferred.
Roll each chum chum into coconut powder and garnish with cardamom powder, tutti fruity and pistachios halves. Serve chilled.

Notes:
You can add mawa with chopped nuts as filling in centre of chum chum.
You can sprinkle little rabri on the top of chum chum as garnishing for more variation.

Guessing Game.... Dove



When I was a child, sometimes I used my mom’s stuff and because of her fear... I did every notorious activity, when she went out. Whenever mom came back before time, she started yelling on me when she entered her room. I tried to drape her saree, use lipsticks, bindis, nail paints, jewellery, bangles and more stuff. During that time, we had no camera at home but those images are still clear in my mind. Now I know that she was smiling inside but always scolded me because of wasting and destroying her makeup and accessories.

I want to share one more moment of my teenage also. Manisha and I were good buddies. We shared every good and bad moment with each other. We took admission in girl’s college and attended the fresher party which was organised by our seniors. That day we did lots of masti with other freshers and acted as if we were seniors. Every one interacted with us as we were also seniors. But during the party when the actual seniors announced the intro section where everyone had to give a small introduction about themselves like schooling, background and why they joined this college the other juniors came to know that we were also freshers like them. We thought that they would be angry on us but they were very cool about it. No one felt bad and became our good friends for the next three years. I will never forget both these moments and they will stay in my mind throughout my life.


I did many more of these silly mistakes in my life which have become great and beautiful memories with friends.  Today I feel glad to have loads of wonderful and joyful memories in my life.

Khajur Badam ke Laddoo| Date Almond Rolls

Dates and Almonds ladoo or khajur and badam ladoo is easy sweet recipe which prepared with chopped dates, almonds and coconut flakes. It’s a best option for winter season. For this recipe, no needs to add extra sugar quantity and very healthy sweet recipe. You can add more flavorful nuts like cashews, peanuts, pistachios which you prefer.


Preparation Time: 10 Minutes
Cooking Time: 12 Minutes
Servings: 4

Ingredients:
1 Cup Dates, seedless and chopped
1/3 Cup Almonds, finely chopped
1/4 Cup Coconut, grated
1 Tsp. Cardamom Powder
1 Tbsp. Clarifying Butter/ Desi Ghee



Instructions:
Clean and Chop the dates and blend it with little water until to smooth.
Heat the ghee in pan and cook the date paste until to water evaporated.
Add chopped almonds, grated coconut and cardamom powder.
Mix all things together and cook for 2 minutes more.
Remove the mixture into plate to cool at room temperature.
Grease the palm with ghee and make small lemon sized laddoos.
Keep this laddoos in airtight jar for 3-4 days.

Notes:
You can add pistachios, cashews and more nuts which you like it.
Dates are already sweets, so there is no need to add sugar.

Tamatar Ki Kadhi | Tomato Recipes



Tamatar ki Kadhi is spicy and tangy dish which served with plain rice and aloo curry. For this recipe, you have to combine the tomato puree with spices and gram flour and cooked this batter on simmer flame for 5-10 minutes. Tamato kadhi is easy to cook recipe from Rajasthani cuisine and served with rice or parathas.

Preparation Time: 15 Minutes
Cooking Time: 15 Minutes

Ingredients:
4 Medium Tomatoes Puree
1 Tbsp. Gram Flour
Salt to taste
1/2 Tsp. Turmeric Powder
1 Tsp. Coriander Powder
1 Tsp. Red Chili Powder
Green Coriander Leaves, chopped for garnishing

For Tempering
1 Tbsp. Oil
1/2 Tsp. Mustard Seeds
1/2 Tsp. Cumin Seeds
5-6 Curry Leaves
Pinch of Asafoetida
2-3 Dried Red Chilies, whole



Instructions:
Combine tomato puree, salt, coriander powder, turmeric power, red chili powder and gram flour together in separate bowl. Add 2 cup of water and whisk it.
Heat the ghee or oil in non-stick pan, add tempering ingredients.
When they starts splutter, add tomatoes mixture and stir continuously on medium flame.
Cook the kadhi for 10-12 minutes on medium flame.
Garnish with coriander leaves and serve hot tamatar ki kadhi with rice.

Ananas Panna


Pineapple panna or Annanas Panna is really tasty and healthy drink for parties. Traditionally, Panna is made with raw mango and sugar but for a more variation I use grilled pineapple for this recipe. Serve chilled with little chunks of fresh pineapple to enhance the taste more. 

Preparation Time: 15 Minutes

Ingredients:
1 Fresh Pineapple
1 Tsp. Black Pepper Powder
1 Tsp. Roasted Cumin Powder
1 Tsp. Black Salt
2 Tsp. Sugar
1 Lemon Juice
Ice-cubes

Instructions:
Grill the pineapple on stove for 10-12 minutes.
Peel and chop the Pineapple and blend it until to smooth.
Strain the mashed pineapple for fresh juice.
Now combine all ingredients together with juice and serve chilled.

Notes:
You can use fresh pineapple juice also for instant version.

Spicy Masala Sweet Corn



Masala sweet corn is very simple, tempting and healthy recipe which can be prepared within few minutes. You can serve as time pass snack which liked by everyone. My mom is really big fan of this sweet corn recipe. For more variations, you can add sauté onions or tomato ketchup to makes this recipe more interesting and flavorful. This recipe is great option for anytime specially monsoon season when you get easily fresh corn varieties in market.

Combine hot and steamed corn kernels in bowl and mix with lemon juice, melted butter and spices as per taste. Serve hot spicy masala sweet corn.

Bhutte Ki Kees | Indore Speciality


This time I choose the cooking with corn theme under BM#35. For this theme, first I choose butte ki kees recipe which is cooked with spices and milk prepared beautiful creamy savory dish. It’s a speciality of Indore city, popular as street food. This recipe is simple and interesting which I had never tasted before. For this recipe, you can use sweet kernels or cobs, grind them with ginger, chili and cumin and sauté with milk and spices until to dry form.






Preparation Time: 15 Minutes
Cooking Time: 20 Minutes

Ingredients:
2 Cup Sweet Corn Kernels
1/2 Cup Milk
1 Tsp. Ginger, chopped
1 Green Chili
1/2 Tsp. Cumin Seeds
1/2 Tsp. Turmeric Powder
1/2 Tsp. Coriander Powder
Salt to taste
1 Tsp. Sugar
1 Tbsp. Oil
1/2 Tsp. Mustard Seeds
5-6 Curry Leaves
Pinch of Asafoetida
Green Coriander, for garnishing
2 Tsp. Lemon Juice
Coconut Flakes, optional




Instructions:
Grind the sweet corns, ginger, green chili and cumin seeds together coarsely and keep aside in separate bowl.
Heat the oil in pan, add mustard seeds, asafoetida and curry leaves.
When they starts splutter, add turmeric powder and coriander powder and stir two seconds.
Add corn paste and cook for 5 minutes until to moist evaporates.
Add the milk slowly, stir continuously and cook on simmer flame until to cook.
Add salt, sugar and lemon juice and mix it again.
Serve hot and garnish with coriander leaves and coconut flakes.

Fruit Custard| Fruit salad with Custard



Fruit custard is one of simplest and healthy dessert which loved by adults and kids both equally. For this recipe, you have to boil the milk and cook with custard mixture and serve chilled with chopped seasonal fruits which you prefer or like. It’s a perfect summer treat or even you can serve as dessert after meal. You can also add slivered nuts like cashews or almonds which gives an extra crunchy taste. Always try to choose colourful fruits which makes bowl so attractive and vibrant.




Preparation Time: 10 Minutes
Cooking Time: 10 Minutes

Ingredients:
2 Cup Milk + 1/4 Cup Milk
3 Tbsp. Vanilla Flavored Custard Powder
3 Tbsp. Sugar
1 Cup Mix fruits (Grapes, Apricot, banana, apple, papaya, orange)
Few Almond, chopped

Instructions:
Chop the fruits into cubes and keep aside.
Boil the 2 cup mix in sauce pan on medium flame.
Mix the custard powder with 1/4 cup of milk without any lumps.
Combine custard mixture and sugar in boiling milk and mix well. The mixture will start thickening and keep stirring until to creamy texture.
Keep aside to cool at room temperature and serve chilled with mix fruits and almonds halves.

Notes: The custard will get thickened on refrigerating also so the consistency should be a bit runny.

Shahi Tukda



Shahi Tukra is Nawabi dessert which prepared with fried bread soaked in sugar syrup and topped with chilled rabri and nuts. It’s a royal treat which look so tasty and crunchy. Shahi Tukda is perfect royal dessert to prepare for special occasions and Indian ceremonies. If you are health conscious, then you can toss the bread with little butter instead of fried version and use sugar free to prepare rabri.



Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Servings: 4

Ingredients:
4 Bread Slices
Oil for Frying
1 Cup Sugar
1 Cup Water
Few Saffron Strands
Few Chopped Nuts
(Almonds, raisins, pistachios and cashews)

Instructions:
Heat the water in pan, when water starts boiling, add sugar and cook until to dissolve.
Prepare one string consistency sugar syrup and add saffron and mix it. Keep aside.
Cut the bread slices into triangle shape.


Heat the sufficient oil in pan and deep fry them until to golden and crisp.
Remove them on kitchen towel to drain excess oil.
Soak the fried bread slices into sugar syrup for 5-7 minutes.
Place the bread slices into plate and pour chilled rabri.
Garnish with chopped nuts and saffron and serve chill.

Notes: If you are calorie conscious, then just the roast the bread slices with little greased oil.
