Foodabulous Fest- Celebrate “November Month & Giveaway”


After a long time, again I get chance to announce my event "Foodabulous Fest" on my space “Simply Tadka”. Foodabulous Fest means to celebrate Indian festivals with fabulous food. November month is full of festivals especially festival of lights i.e. Diwali. In Hindu tradition, Diwali is a five day festival which starts on dhanteras. Diwali involves the lighting of small clay lamps filled with oil to signify the triumph of good over evil. During Diwali, all the celebrants wear new clothes and share sweets and snacks with family and friends. 

As a part of festive time, there will be a chance to win giveaway sponsored by “Just Eat” online food portal. This giveaway is only for Simply Tadka's fan who fulfill all mandatory rules will be eligible for giveaway. 
You have to just prepare any kind food; sweet or savory items but only vegetarian food which appropriate for festival time.

Aloo Baingan Ki Sabzi/ Potato Brinjal Stir Fry


Today I wanna share one of very simple and easy to cook, stir fry recipe. Aloo Baingan or Potato Brinjal stir fry is a simple and spicy vegetarian dish which has been made in my kitchen many times. Both aloo and baingan complement each other very nicely in this recipe. It can be served with curd and chapaati (Indian flatbread).  For this recipe you have to need baby eggplants. You have to cook eggplants and potatoes both in mustard oil and toss with spices and lemon juice. Baingan is Hindi word, brinjal or eggplant both are English term.




Preparation Time: 10 Minutes
Cooking Time: 15-18 Minutes

Ingredients:
3 Medium Potatoes, finger chop
10 Baby Eggplants, quarterly
2 Tbsp. Mustard Oil
1 Tsp. Cumin Seeds
Pinch of Asafoetida
1/2 Tsp. Turmeric powder
1 Tbsp. Coriander Powder
1/2 Tbsp. Raw Mango Powder
1 Tsp. Red Chili Powder
1/2 Tsp. Garam Masala
Salt to taste
1 Tsp. Lemon Juice

Instructions:
Chop the potatoes into finger form and eggplants into one by four.
Heat the oil in pan. When oil's aroma comes, add cumin seeds and asafoetida.
When they starts splutter, add potatoes and eggplants. Add spices and mix well.
Cover and cook for 15 minutes until to soft. 
Garnish with chopped coriander and lemon juice.
Serve the potato eggplant stir fry with curd and chapatti.

Note:
You can add tomatoes and onion too, it’s completely optional.

Kabuli Chana Biryani/ Biryani Recipe/ White Chickpea Rice Recipe



Kabuli Chana Biryani is really tasty and delicious biryani recipe, a complete combination of rice and pulses. You can serve this biryani with curd or raita and mango pickle. It’s really healthy and complete meal to serve as main course in lunch or dinner menu.  

For this recipe, we have to cook rice and white chickpeas separately and assemble them in microwave safe dish. Even you can use roasted dry fruits to garnish biryani. 





Preparation Time: 20 Minutes
Cooking Time: 35 Minutes

Ingredients:
4 Cup Basmati Rice, boiled
3 Tbsp. Ghee
1/4 Cup Milk
Few Strands Saffron
1 Cup Fried Onions
Green Coriander, chopped

For Kabuli Chana Gravy
2 Cup White Chickpeas, Boiled
1/4 Cup Yogurt  
2 Tomatoes, chopped
2 Green Chili, chopped
1/2 Tsp. Ginger, grated
1/2 Tsp. Garam masala
1 Tbsp. Coriander powder
1/2 Tsp. Turmeric powder
Salt to taste
Red chili Powder to taste




Instructions:
For Kabuli Chana Gravy
Heat the ghee in a pan, add cumin seeds.
When they starts splutter, add green chili and ginger and sauté for 1 minute on medium flame.
Add chopped tomatoes and cook till to soft and mashy. Add spices and mix well.
Add the yogurt and cook on low flame for 2 minutes.
Add kabuli chana with little water and cook for 5-7 minutes.

Other Preparations
Slice the onion and deep fry them until to golden and crisp, remove on plate and keep aside.
Soak the saffron in milk and keep aside.
Cook the soaked basmati rice in enough water and salt, Keep aside.

How to Assemble
Take a microwave safe dish and grease with ghee.
Sprinkle fried onion and chopped coriander.
Put the half portion of cooked rice and spread it evenly.
Pour half portion of milk and fried onion and chopped coriander.
Put the kabuli chana gravy over it and spread it evenly.
Again put the remaining rice and spread evenly.
Pour milk and garnish with chopped coriander and fried onion.
Microwave it 10-15 Minutes and serve hot.

Notes:
You can use dry fruits also for garnishing in biryani, If you like dry nuts like cashews, raisins, almonds.

Crunchy Nutty Chocolates


Crunchy Nutty Chocolates recipe is very simple and easy to make with few steps, you have to mix the cornflakes and nuts in melted chocolate, cool and enjoy. You can gift these chocolates to your love ones on special occasion or upcoming Diwali festival.  Cornflakes give crunchy texture and dry nuts (cashews, pistachios, almonds) gives nutty taste to these chocolate.




Preparation Time: 15 Minutes
Cooking Time: 15 Minutes
Servings: 15

Ingredients:
100gm Dark Chocolate, chopped (Semi Sweets)
50gm White Chocolate, chopped
1/2 Cup Cornflakes, Crushed
1/4 Cup Butter, soft
3 Tbsp. Milk
3 Tbsp. Icing Sugar
1/2 Tsp. Vanilla Essence
1/4 Cup Nuts, Chopped (Almonds, Pistachios and Cashews)


Instructions:
Microwave the butter and both chocolate together in deep vessel until to smooth and melt.
Add the milk, icing sugar and vanilla essence and mix well.
Add the cornflakes and chopped nuts and mix well.
Using a plate lined with butter paper or parchment paper, place 1 tbsp mixture to butter paper to make chocolate bites.
Freeze it until to set and Enjoy.

Notes:
Adjust the sugar according to chocolate sweetness or tastebuds.
You can choose any combination of nuts like walnuts, raisins, almonds, fig and more.
You can use double boiler method to melt chocolate.

Chocolate Ghewar Pudding



We had leftover mawa ghewar at home in large quantity, no one interested to eat ghewar more. Then I preferred to discuss this problem with my friends regarding how to utilize this leftover ghewar? That moment one of my favorite co-blogger and now my good friend like elder sister, +Vaishali from Ribbons to Pastas suggest me this recipe “Chocolate Ghewar Mousse”, completely fantastic and delicious recipe.


After Vaishali’s guideline, I tried this recipe in my kitchen with specific ingredients. It’s really awesome in taste and instant version of Indian Mousse. In this recipe, there are no needs of chinagrass, gelatine or eggs types of ingredient which are essential for every mousse recipe. Mawa ghewar is made with three main ingredients are flour, khoya and sugar which gives sweetness and thickness to pudding as mousse.

Preparation Time: 10 Minutes

Ingredients:
2 Cup Mawa Ghewar, crushed
1 Cup Milk
150 gm Semi Sweet Milk Chocolate, chopped
2 Tbsp. Sugar, Optional
1 Tsp. Vanilla Essence

For Garnishing
Almond powder or Chopped Almonds
Chopped Pistachios
Choco Chips


Instructions:
Boil the milk in non-stick pan.
Add crushed mawa ghewar, chocolate and vanilla essence in boiled milk.
Stir together until to smooth consistency. Add sugar as per taste and mix well.
Remove from the flame and keep aside to room temperature.
Pour into individual serving and keep in freezer for one hour to set.
Garnish with almond powder, chopped pistachios and choco chips. Serve chilled.

Note:
Ghewar and chocolate both are already sweets, so you can avoid the sugar in this recipe.

Oreo McFlurry



I love McFlurry, soft serve ice cream and McVeggie burger all this are my favorite menu which available at McDonald  In McDonald, McFlurry available in two different variations, one is Oreo McFlurry and second is M&M Mcflurry But I like Oreo one. Today I wanna share McFlurry recipe with my reader.

This time I tried Oreo McFlurry at home with three simple ingredients are ice-cream, chocolate and Oreo cookies. I hope adults and kids both will be like it. You can use M&M candy also in this recipe which gives crunchy bites or you can go with both. For this recipe, just mix the crushed Oreo with ice-cream and garnish with chocolate sauce and serve in glass.

Ingredients:
16 Oreo Biscuits, Crushed
8 Scoops Vanilla Ice-cream
8 Tbsp. Chocolate Sauce
2 Tbsp. Milk

Instruction:
Combine Ice-cream and milk together and whisk till to smooth and creamy texture.
Add crushed Oreo cookies and mix it.
Garnish with chocolate sauce and serve.

Vegetable Raita




Raita is a side dish which serves with pulao or biryani. For this recipe, you have to mix the chopped vegetables with whipped yogurt and spices. In raita, yogurt may be seasoned with roasted cumin, black salt, chaat masala, black pepper, red chili, mint powder, and other herbs too. There are so many variations available in raita or yogurt like boondi raita, cucumber raita, anar raita, vegetable raita, mooli raita and more. We always prefer to add milk in curd to adjust the thickness which makes raita creamy and delicious more instead of adding water.  


Preparation Time: 15 Minutes
Cooking Time: 0 Minutes

Ingredients:
4 Cup Fresh Yogurt
1/2 Cup Cucumber, peeled and chopped
1/2 Cup Onion, chopped
1/2 Cup Tomatoes, chopped
1/2 Cup Boondi
2 Tsp. Green Chili, finely chopped
2 Tbsp. Green Coriander, finely chopped
Salt to taste
Roasted Cumin Powder to taste
Red Chili Powder to taste
Black Pepper Powder to taste

Instructions:
Beat the yogurt until to smooth or use muslin clothe for this.
Add chopped onion, tomatoes, cucumber, chili and green coriander in yogurt.
Add boondi and spices except salt and mix well.
Add the 1/2 Cup of water to adjust the consistency of raita and add salt. Chill and serve.

Notes:
Add the salt in raita at last (serving time) otherwise it will be sour.
Add little milk instead of water which gives creamy texture to raita and makes delicious.
Adjust the spices as per taste.

Hot Chocolate Fudge for SFC #1


I started new group Sweet Fantasy Club this month and it’s our first Month challenge where we have to publish two recipes together. One is “Kesari Rajbhog” under Indian sweet category and second is “Hot Chocolate Fudge” under Fusion dessert.  It’s really wonderful experience with all members to share recipes together at one place.



Hot chocolate fudge is simple and interesting dessert which made with chocolate syrup and ice-cream. For interesting twist, you can add cherries, nuts and choco chips. As Simply Tadka suggested this recipe under fusion category, you can add whipped sweet cream in this recipe.

Personally I love Haldiram’s hot chocolate fudge; it’s really yummy and tasty. Today I share basic recipe which can prepare in form of two layers in glass with three ingredients: ice-cream, chocolate sauce and nuts.


Preparation Time: 10 Minutes

Ingredients:
8 large Scoops Vanilla Ice-cream
1/2 Cup Melted Chocolate or Chocolate Syrup
1/2 Cup Roasted and Chopped Nuts (cashews and almonds)

For Garnishing
Tutti Fruitti
Choco Chips

Instructions:
Pour the chocolate sauce in glass as garnish and keep in freeze to set.
Add 2 scoops vanilla ice-cream and add 1 tbsp. chocolate sauce. Sprinkle few nuts.
Again follow same step, vanilla ice-cream, chocolate sauce and nuts.
Garnish with chocolate sauce, nuts and tutti fruitti and choco chips on the top of each glass.
Serve chilled.
