Kachumber Salad



This time I prepare very simple salad recipe i.e. “Kachumber”, it’s a really tasty and healthy recipe which prepared by some raw veggies included cucumber (kheera), red onion, tomatoes and radish (mooli) with some lemon and salt flavors. You can add bell peppers too if you like which gives lots of color to this kuchumber salad.  You can prepare this salad recipe with in few minutes for your surprise guests. 



Preparation Time: 15 minutes
Cooking Time: 0 minutes
Servings: 1 Bowl

Ingredients
1 Medium Sized Cucumber, Peel and Chopped
1 Medium Sized Onion, Chopped
1 Medium Sized Tomatoes, Chopped
1 Medium Sized Radish, Peel and Chopped
Few Mint Leaves, Chopped
2 Green Chili, Chopped
1 Lemon Juice
Black Pepper Powder to taste
Black Salt to taste
Chaat Masala to taste

Watermelon Juice


Juicy watermelons are indeed packed with some of the best antioxidants in nature. It is the season of watermelons. They are best during the summer as they will be soft, sweet and juicy.
For upcoming summer, we prepare lots of drinks and sometimes brought tinned juices from market which not as good for health because of preservatives. Personally I prefer to prepare homemade juices which are so fresh and preservative free. This time I prepare fresh watermelon juice at home. It’s really easy and simple to prepare with only watermelon chunks. You have to just blend watermelon chunks and strain it. Add little salt and lemon juice which increases taste.

Homemade Spinach Puree

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and especially high in lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, iron, vitamin B2, calcium, potassium, vitamin B6, folicacid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. Recently, opioid peptides called rubiscolins have also been found in spinach.


This time I post how to prepare spinach puree with in few minutes at home. Its very easy process and you can store this puree in frozen form. Just place this puree in ice mould and keep in freezer for few hours to set. Keep this in airtight pouch in freezer for further to use. 

Preparation Time: 15 Minutes
Cooking Time: 10 Minutes
Ingredients
Spinach Bunch
Water

Tool
Blender/ Mixer

Direction
Clean and wash the spinach leaves and boil the leaves in boiling water for 10 minutes. Drain and wash under running cold water to maintain green color of spinach. Squeeze this blanch leaves. Keep aside to cool. Blend boiled spinach into blender for smooth puree consistency. Spinach puree is ready to use.

Peanut Butter Bites

This time I prepare very easy and simple recipe of homemade chocolate, that’s call Easy Peanut Butter Bites. For this recipe we have to prepare small ball with peanut butter and coat with chocolate. It's really fantastic and healthy too for kids and adults both.


Preparation Time: 10 minutes
Chilling Time: 3 hours
Ingredients
1 Cup Peanut butter
1/2 Cup Sugar powdered
2 Tbsp. Melted Butter
Melted Cooking chocolate



Direction
Combine peanut butter, little melted butter and sugar (according to taste) in bowl. Mix well. Make small balls from this batter. Place this ball on butter paper and keep in freezer for one hour to set.
Dip and coat in melted chocolate. Again place this ball on butter paper and keep freeze again for 1 more hour.
Note: if you have not butter paper, use aluminium foil and grease with little butter.

Homemade Roasted Cumin Powder

Cumin is very essential spice which used in various recipes of Indian cuisines, in whole and ground form both. Today I post homemade roasted cumin powder, for which  first roast the jeera on hot tawa till to dark and grind it till to powder form. This recipe is used in various recipes especially in street food for chaat and dahi bhalla, raita or curd, Indian chutney more.


Cumin seeds are used as a spice for their distinctive flavour and aroma. It is globally popular and an essential flavouring in many cuisines, particularly South Asian, Northern African and Latin American cuisines.
Cumin can be used ground or as whole seeds. It helps to add an earthy and warming feeling to food, making it a staple in certain stews and soups, as well as spiced gravies such as chili. It is also used as an ingredient in some pickles and pastries.
Although cumin seeds contain a relatively large percentage of iron, extremely large quantities of cumin would need to be consumed for it to serve as a significant dietary source. According to the USDA, one tablespoon of cumin spice contains are Calories (kcal): 22, Fat (g): 1.34, Carbohydrates (g): 2.63, Fiber (g): 0.6 and Protein (g): 1.07

Creamy Cucumber Dip



I choose miscellaneous theme for 4th week of BM#27, under this we have to post some crafty and basic recipes… For the very 1st day of this theme, I prepared “Creamy Cucumber Dip” which serve with fresh fruits, biscuits, crackers, nachos or chips. It’s a very refreshingly cool and minty in flavors. This creamy texture makes this dip so beautiful and refreshing and explores the taste of snacks. You can prepare this dip in few minutes and serve chilled. It’s a really good accompaniment to serve….. You can prepare eggless mayonnaise too at home.

Watermelon Granita/ Watermelon Iced Candy

Granita is semi frozen candy in ice form dessert which prepare by sugar, lemon juice, and some flavors. For this recipe, I use watermelon juice as a flavor. Now a days it’s so hot here…. for this, granita or ice candy is perfect treat for summer. To make this, you have to do just two simple step; first prepare fruity flavors and freeze it and secondly scrap the mixture and again freeze it. This time I prefer to use seasonal fruit watermelon. The color is really shiny and glossy like crystals.


When we were in school, after the School bell candywala’s comes with lots of colorful ice candies ... Me and my friends both always eat those pipe-candy. I always brought in the red and Coco Cola flavor, both were my favorite.

Watermelon Orange Salsa

I already post two very common salsas recipes in Simply Tadka that are Tomato salsa and Onion-chili salsas both are tangy and spicy in taste. But this time I prepared salsa with seasonal fruits. Combination of watermelon and orange both seasonal fruits, called “Watermelon Orange Salsa”. Its really awesome in taste and good option for upcoming summer season to serve with khakra, nachos or chips. 



Under this recipe, we combine watermelon, orange chunks, cucumber, onion and tomatoes with sugar and salt seasoning. This recipe is perfectly fit to seasonal recipe theme in blogging marathon.

Badam Milk


Today I post very authentic drink i.e. Badam Milk or Almond milk, you can serve chilled or warm as you like. For this recipe, boil milk with almond paste, cardamom and sugar till to ¾ quantities and garnish with nuts. It’s a really traditional beverage recipe which is very popular in all over India and good option to serve in festival celebration. Badam milk is very good for activeness and increase energy. It’s improves skin quality too.


Palak Paneer (with Aalan/marination)

Paalak paneer is an Indian and Pakistani dish consisting of spinach and cottage cheese in a thick sauce based on pureed spinach. It is a popular vegetarian dish. Paalak paneer is one type of saag, which can also be made with mustard leaves.


Paalak paneer is mainly served with naan, roti and paranthas in dabbas but personally I love missi roti (gram flour with wheat flour based Indian flatbread) with palak paneer. At the time of serving, if you will add little lemon juice, its increase the taste 10times more.  
Paalak/ spinach is easily available in every season but in winter, you can get fresh, soft, green and raw paalak (kacchi palak) which is very good for cooking spinach recipes. Under this recipe, we add aalan which made by curd and gram flour… It helps in reducing bitterness and enhances the color and taste both.
