Latke is Jewish cuisine which associated with cuisines of many European and Middle Eastern century. It is the national dish of Belarus. Generally Latke is potato pancakes are shallow fried snack of grated potatoes, flour, eggs and flavored with onion and seasoning and serves with sweet apple sauce and salted sour cream or cheese.
This time I prepared Vegetable latke with apple sauce and sour cream, it’s an eggless version of latke in which I used grated potatoes, carrots and onions and combine with cornflour and seasoning. For sour cream, we have to used whipped cream with seasoning and lemon flavour but I used hung curd instead of cream. Apple sauce is a puree form which prepared with blanched apple and sugar.
