Gol Gappe Shots/ Flavoured Panipuri

Gol gappa or Panipuri is very famous street snack in all over India. It is round, so crisp and filled with potatoes stuffing and pudina flavour water as traditional Panipuri. It’s small in size but enough to fit in mouth.  Pani comes from the Hindi word for water and puri (or poori) is the name of an Indian bread made by frying dough in oil. It is known as bataasha in the western region. Now these days, Panipuri comes with some new flavour of water which increases its taste more.

Tangy Noodle Sandwich

Today I post “Tangy Noodle Sandwich”…..under this recipe we cook first Maggie with ketchup for tangy taste….then add with bread and hot  and yummy toast is ready for  your tummy…really  its completely delicious….hope everyone like it. You can do same with leftover noodles and Maggie….for more different flavors…add favourite sauce or spices…

Tomato Vada/ Stuff Tomato Vada/ Tomato Pakora

Today I post something different i.e. “Stuff Tomato Vada”, it’s three step recipe, under 1st step, we make gram flour and spices batter. In 2nd step, mash and add spices into boiled potatoes.  In 3rd step, add mixture into tomato halves and fry them.
Tomatoes are now eaten freely throughout the world, and their consumption is believed to benefit the heart, among other organs. They contain the carotene lycopene, one of the most powerful natural antioxidants. In some studies, lycopene, especially in cooked tomatoes, has been found to help prevent prostate cancer, but other research contradicts this claim. Lycopene has also been shown to improve the skin's ability to protect against harmful UV rays Natural genetic variation in tomatoes and their wild relatives has given a genetic plethora of genes that produce lycopene, carotene, anthocyanin, and other antioxidants. Tomato includes Vitamin A and Vitamin C.

Ingredients
3 tomatoes (halves cut)
For batter
1 cup gram flour
1 tsp. carom seeds
A pinch of meetha soda
½ tsp. salt
½ tsp. red chillies powder
A pinch of turmeric powder
½ tsp. ginger and green chillies paste
For stuffing
1 boiled potato
½ tsp. mustard seeds (rai)
Salt to taste
Red chillies to taste
½ tsp. amchoor/ raw mango powder
½ tsp. coriander powder
A pinch of turmeric powder
A pinch of garam masala
½ tsp. lemon juice
Vegetable oil for deep frying

Method
For the batter
Add all ingredients of batter into one bowl and add enough water for smooth and thick consistency of batter.
For stuffing
Take a boiled potato. Now peel and mash it. Add all spices except mustard seeds and mix well. Heat the 1 tsp. oil into the non-stick pan on medium flame. Add mustard seed, when they start crackle. Add potato mixture into pan and mix well. Remove from the flame and keep aside to cool.
For vada
Cut and scoop out all pulp from the tomatoes. Fill the potatoes mixture into halves and combine the cut out part of the tomatoes carefully, dip in a mixture of gram flour and coat well. Now heat the vegetable oil into the wok, when oil is hot enough for frying, add tomato pieces one by one. Remove the Tomatoes Vada into paper. Cut in two parts and serve hot with salad and chutney.

Gobhi Bhajias/ Gobhi Ke Pakore/ Cauliflower Fritters In Indian Style

Bhajias or fritters also known as Pakoras, these are the perfect snack for a cold, rainy day and serve them with sweet tamarind chutney. Use any vegetable you like, here I used Cauliflower.
Cauliflower is low in fat, low in carbs but high in dietary fiber, folate, water, and vitamin C, possessing a high nutritional density. Cauliflower contains several phytochemicals, common in the cabbage family that may be beneficial to human health.
§  Sulforaphane, a compound released when cauliflower is chopped or chewed, may protect against cancer.
§  Other glucosinolates
§  Carotenoids
§  Indole-3-carbinol, a chemical that enhances DNA repair, and acts as an estrogen antagonist, slowing the growth of cancer cells. (from Wikipedia)

Idli Manchurian

When we prepared suji’s idli which is very healthy and low cal. Food, it’s my favourite and never says No to this. We can make so many new recipes or tasty snacks with leftover idli’s i.e. masala idli, fried idli, idli sandwich, so many variations. Here is one which I’m trying today which called “Idli Manchurian”.

Semolina is simply a form of ground hard wheat called durum wheat.  It is often used to make pastas and to thicken stews.  Semolina is very high in protein making it an ideal substitute to flour, especially for vegetarians.  Semolina is said to have a low glycaemic index, meaning that it is digested and absorbed at a slower rate in the stomach and intestines than white flour.  This characteristic is of a particular importance for those wanting to reduce their weight as well as for diabetics striving towards better blood sugar control.  Slower digestion and absorption helps to prevent rapid fluctuations in blood glucose levels.
